Vegetable noodles are my most favorite Chinese food items that I crave about. This recipe is a delicious and mouth-watering item, which is prepared by cooking noodles and vegetables such as carrot, capsicum, peas, beans, etc. in soya and red chili sauce.
If you replace a few vegetables in vegetable noodles and use chicken – you can get chicken noodles at the end.
Here, I will talk about Vegetable noodles and if you’re a strictly vegan. You can replace cheese or paneer with tofu and you can get a vegan delicacy.

Process To Make Vegetable Noodles: –
First of all, in a big vessel add water, 1 teaspoon of salt, and 1 teaspoon of oil and boil it. Once the water comes to a boil add the raw noodles.
Now boil the noodles for 5 minutes and then turn off the heat. then drain the water from the noodles and pour 1 cup of cold water to prevent further cooking.
Then sprinkle 1 teaspoon oil and mix it thoroughly so that noodles don’t stick to each other. then keep it aside.
After that take a kadhai or wok and add 2 tablespoons of oil and add 2 garlic cloves, 1-inch ginger, and a chili – saute.
Add onions to it and saute it with other ingredients. After that add vegetables like carrot, capsicum, pea, beans, red capsicum, and broccoli. Then stir fry on high flame for 3 minutes and add cabbages.
Now add tomato sauce, soy sauce, vinegar, chili sauce, black pepper powder, and some salt. again stir fry unless we get an even texture. toss the noodles properly and mix it. finally, garnish the noodles with chopped spring onions and enjoy!
